From the Restaurant Team Behind Tinker Street

Peter George and Tom Main opened Tinker Street Restaurant & Wine Bar in 2014, after a combined 60 years as restaurateurs. Peter George opened Peter’s Restaurant in Fountain Square in 1985. Tom Main was an original partner in the Puccini’s Smiling Teeth Pizza & Pasta restaurant chain.

img_2201As written in the Indianapolis Star: “Before there was such a thing as a foodie hood in Indy, or anywhere else in America, there was restaurateur George…. From the early 1980s to the early 1990s, George ran the Fountain Square fine-dining restaurant Peter’s in the building now hosting Siam Square. Ahead of his time, George served Midwest fare made with local ingredients.”

In a 2016 profile interview, The Indianapolis Business Journal’s Mason King lays out the colorful story of the founding of Tinker Street: “George and Main fell on hard times in the 2000s and ended up as housemates. By then out of the restaurant business, they began plotting a return as partners in a new venue, which became Tinker Street, at 402 E. 16th St. Modestly sized and in a resurgent neighborhood, Tinker Street was an immediate hit….”

About the Head Chef

Rachel Hoover attended New England Culinary Institute in 1995. During opening weekend, students were asked to share what kinds of foods they liked to eat, to help them track how their flavor profiles would change by the time they graduated. Chef Rachel’s flavor profile did grow, but her chef’s soul gravitated toward Latin flavors. In 1999, she met her husband, Victor, who is from Puebla Mexico and Mexico City. Her love for Mexico was solidified! Chef Rachel shared in her husband’s family traditions, revolving around food, music, tequila and celebrating togetherness. She spent many hours in the kitchen with her mother-in-law, soaking in new ingredients, flavors and cooking techniques. As Festiva’s journey begins, Chef Rachel opens with a menu of her favorite craveable dishes!

About the Beverage Director

Jason Foust is a career bartender specializing in mixology and specialty spirits, with an emphasis on fresh, local, seasonal ingredients. He has spent 15 years behind the bar in every setting: restaurant, club, tavern, backyard and hotel.  Jason has been featured in Tasting Panel Magazine, GQ Magazine, Edible Indy and NUVO, in articles highlighting his participation in competitions and his unique approach to drink presentation.
